TANDOORI ROTI

INGREDIENTS [ 1 cup – 200 ml ]

  • Wheat flour – 4 cups
  • Baking soda – ½ tsp
  • Baking pwdr – ½ tsp
  • Oil – 1tbsp
  • Curd – ½ cup
  • Water as required for kneading
  • Salt to taste
  • Butter or ghee as required

PREPARATION

Sieve the flour + baking pwdr + baking salt + salt twice . [for even mixing of all ingredients ]

Take the sieve flour in a big plate .

Add salt + oil + curd and mix well .

Now slowly add water and start kneading .

Knead it into a soft smooth dough .[not too soft or hard ]

Knead the dough well.[4 – 5 mins]

Cover and keep aside for min 30 mins or more .

TANDOORI ROTI

METHOD

Remove the dough and start kneading again for sometime .

Divide the dough into equal portions .[ bigger than regular chapatti ]

Roll each portion into a smooth ball.

Place a tava with handle on fire.

Start rolling by dusting with dry flour ,roll the dough into a small thick circle or oval shape.

Rub water evenly on one side .

Lift gently and place the roti on the hot tava with water side facing down .[ we rub water so that it sticks to the pan .[medium flame ]

Roast till you see bubbles appearing all over.[1 minute]

Now tilt the tava upside down over the fire and roast the roti .[medium low flame ]

Keep rotating the tava so that the roti doesn’t burn.

Do it till you see brown golden spots all over .

***** you can remove  the roti and try roasting it on direct fire on the other side if it is not cooked ,

Once done ,either serve plain or apply ghee / butter .

VARIATION –

I also tried with my regular chapatti dough ,it worked well and had same taste .So we can always make without baking soda or baking pwdr .

This I made with regular chapatti dough – rolled it thick and roasted in above method .

NOTES

  1. The rotis have to be thick .
  2. Some either add only baking soda or some just add baking pwdr .I took half of both .The rotis were soft and yum , not hard or rubbery like hotel ones,
  3. Tandoori rotis are made of wheat flour ,if you want u can take a mixture of maida + wheat flour in any ratios.
  4. Insteadof tava we van used cooker ,placed uoside downover the fire .
  5. Also after roasting on one side over the tave ,place it on direct fire or wire gauze /papad jail  , just like we do for phulkas.
