Tender coconut ice cream

INGREDIENTS

  • Heavy whip cream / fresh cream – 1 cup [chilled ]
  • Condensed milk – ¾ cup or as per taste
  • Tender coconut flesh [ malai ] – 1 ½  cup fresh [ app – 2 coconut ]
  • Fresh cream to enhance the texture – 1 tbsp [ amul ] optional
  • Finely chopped tender coconut flesh – ½ cup

PREPARATION

  1. All the ingredients we use , must be chilled .
  2. Blend the coconut flesh [ malai ] into fine puree .
  3. Pat dry the chopped malai .

METHOD

Take the chilled cream in a bowl .

Beat the cream till soft peaks are formed and the quantity doubles. [ 3 to 4 minutes ]

Don’t over beat.

Add condensed milk + fresh cream and again beat for a minute.

**** HERE – Your base for the icecream is ready ,after this you can add any flavors / juice / pulp for different types of ice creams.

Add the coconut puree and beat for few seconds till it blends together completely.

Add in the chopped malai and mix it with a spatula .

Pour it in a freezer safe container and freeze it for more than 6 – 8 hours or overnight.

Once frozen, scoop and serve in a bowl or cone.

NOTES

  1. If you don’t have a beater use a mixie , time required will be less. Quantity will be less compared to beater .
  2. Be careful while adding chopped malai pieces – pat dry it .
  3. U can also add ½ cup of thick coconut milk ,
  4. In some recipes I have read members adding coconut water . I have not tried .
  5. ****Once the basefor the icecream is ready , you can add any flavors / juice / pulp for different types of ice creams – for 1 cup cream you have to add either one cup of juice or pulp .If adding artificial flavours or colours then add 3/4 th or 1 cup of milk / water. Reduce the quantity of water / milk  if you want the ice cream to be like machine made Softys.
  6. There is no chance of ice crystals to form in this recipe.
  7. Instead of condensed milk we can use half or  ¾ cup powdered sugar.[ or as per taste.
  8. Quantity of condensed milk or sugar depends on the sweetness of the juice and your taste.
  9. Also check whether the whip cream is sweet . Some whip creams have sugar . I have used RICHS GOLD brand.
  10. You can also use amul whip cream / tropolite.
  11. Don’t over beat the cream else it will crack .
  12. You can chill the beater’s blade and mixing bowl for sometime.
  13. All the ingredients have to be chilled.
  14. Same can be done with other fruits also.
  15. Instead of fresh fruit juice you can use canned juice.
