FOR THE BHAJANI FLOUR

INGREDIENTS

  • Raw rice – 1 cup
  • Bajra grain – 1 cup
  • Jowar grain – 1 cup
  • wheat grain – ¼ cup
  • urad dal – ½ cup
  • chana dal – ½ cup
  • coriander seeds – ¼ cup optional

METHOD

  1. Roast all the above ingredients on low or medium flame till it turns light brown and aromatic.
  2. Give it to the flour mill to grind it to a fine powder[with mixer you will not get the desired texture]
  3. Sift and store it in air tight container.

FOR THALIPEETH

INGREDIENTS

  • Bhajani flour – 1 cup [ you can buy store bought flour ]
  • Finely chopped onion – ½ cup
  • Grated cucumber / bottle gourd /carrot – 1/2 cup [optional ]
  • Finely chopped coriander leaves – ¼ cup
  • Chilli pwdr – ¼ tsp
  • Turmeric pwdr – ¼ tsp
  • Coarsely grounded peanuts – 2 tbsp
  • Curd – 2 tbsp
  • Ginger garlic paste – ½ tsp optional
  • Jeera pwdr – ¼ tsp
  • Garam masala – ¼ tsp
  • Chaat masala – ¼ tsp
  • Jaggery pwdr – 1  tsp
  • Tamarind /lemon juice – 2 tsp
  • Sesame seeds – 1 tbsp
  • Warm water for kneading
  • Salt as per taste
  • Oil or ghee to roast the thalipeeth

METHOD

Mix all the above ingredients except oil and knead it into a soft dough by adding water  .The dough should be soft , dont make it hard .

Divide the dough and make small balls .

Place a piece of butter paper on kitchen platform .

Place a ball of dough on it.

Pat it down gently into a circle using your wet hands . [ **You can’t roll using rolling pin as the dough will be sticky ]

With your wet finger make a holes .


Lift the thalipeeth together with the butter paper , and flip it onto the hot tava . Remove the butter paper .

Let it cook for few mins on both sides till you see spots .

Drizzle a little oil around the edges of the disc on the skillet, and in the centre. Cover with a lid and allow to cook until golden.
Serve with fresh cream or butter, a smear of hot thecha, and dahi or any chutney .

VARIATIONS

  1. Adding grated veges gives moisture to the dough and helps the thalipeeth to cook with  less oil.
  2. For oil free thalipeeth ,I used waffle maker . Also you can bake it at 180*C for 12 – 15 mins .

NOTES.

  1. Add masalas as per your taste [ ajwain , saunf ]
  2. I have given all the flavours to it .
  3. You can also add ragi flour while making the flour.
  4. You get readymade bhajani flour .Check the contents on the pkt  as it has chilli pwdr already .So adjust ingredients accordingly.
