Vaangi bhaat recipe

                                                VAANGI BHAAT / RICE COOKED WITH BRINJAL

INGREDIENTS

  • Rice – 1 cup
  • Small brinjal – 6
  • Tamarind – a small piece
  • Turmeric pwdr – ½ tsp
  • Green chilli – 1 slit
  • Curry leaves – few
  • Ghee + oil – 2 tbsp
  • Grated ginger – ½ tsp
  • Coconut – 2 tbsp
  • Chana dal – 1 tbsp
  • Urad dal – 1 tsp
  • Coriander seeds – 1tsp
  • Pepper corn – ½ tsp
  • Red chilli – 4 or as per taste
  • Whole garama masala 1 of each [ clove ,cinnamom , cardamom , bayleaf ]
  • Mustard seeds + urad dal + jeera – 2 tsp
  • Cashew – few
  • Asafoetida – a pinch
  • Salt as per taste
VAANGI BHAAT,RICE VARIETY

PREPARATION

  1. Clean wash rinse and soak the rice for 20 mins. Cook it with salt and the whole garam masala . Once the rice is cooked , fish out [remove ] the whole garam masala and discard it .
  2. Roast the coconut + coriander seed + chana dal + urad dal + pepper corn + red chilli . Roast it separately one by one in few drops of oil till they turn brown and aromatic. Grind this with the tamarind into a powder.
  3. Cut the brinjal length wise.

METHOD

Heat oil + ghee in a pan , add mustard seeds + urad dal + cashew + jeera and let it splutter.

Add curry leaves + green chilli + grated ginger and fry .

Add the brinjal + turmeric + salt + asafoetida and fry till soft .

Drizzle little water ,cover and cook till done .[don’t over cook it ]

Add the grounded masala , mix well  and fry for 1 minute.

Add the cooked rice , sprinkle little water [ 1 tbsp ] and mix well.

Cover and cook for a minute.

Garnish with freshly grated coconut and coriander leaves.

Serve with any side dish + raita + papad.

NOTES

  1. Instead of grinding the masala you can use ready made goda masala or sambar masala  or bisibele masala pwdr.
  2. Instead of cooking the rice first ,we can add soaked rice after adding the grounded masala and cook together .[then u don’t have to cook the brinjal till soft .
  3. I had few other veges also ,so I added that.
  4. You can also add onion.
  5. You can drizzle lemon juice once it is done.
