VEG JALFREZI

 INGREDIENTS

·         100 gm potatoes

·         100 gm cauliflower florets

·         100 gm carrot

·         100 gm mix bell peppers [red /yellow /green ]

·         100 gm onions thinely sliced

·         100 gm Paneer

·         2  large tomatoes pureed

·         1 large onion sliced

·         1 tbsp chopped garlic

·         ½ tsp jeera or 2 cardamom

·         1 tsp Ginger garlic paste

·         1 tsp Chilly sauce [ optional ]

·         1 tbsp Tomato ketcup

·         ½  tsp Kasuri methi pwdr

·         ¼ tsp turemeric pwdr

·         1 tsp or as per taste red chilli pwdr

·         1 ½  tsp coriander pwdr

·         ½ tsp Garam masala pwdr

·         Sugar – ¼ tsp [ optional ]

·         Finely chopped coriander leaves to garnish

·         1 or 2 tbsp oil

·         Oil to shallow fry the veggies

METHOD

Cut veggies as shown in picture.

Take oil and fry veggies except the onions and half of the bell peppers.

Keep aside after frying.

In a pan heat oil.

Add jeera or cardamom.

Add  the chopped garlic.

Add onions and saute  till light brown.

Add in the half kept bell peppers.

Then add the tomato puree..add salt and fry well till oil separates .

Lower the flame .

Then add the dry masala pwdr and fry .[ turmeric + chilli pwdr coriander pwdr garam masala pwdr ]

Add ½ or ¾ cup water and mix well .

Keep stiring the masala..

Then add tomato ketchup + sugar and  red chilly sauce and give a nice stir..

Finally add the deep fried veggies + paneer  in the gravy.. [ U can also fry the paneer ]

Mix well..

Cover the pan with lid and let it simmer for about 6  – 8  minutes on low flame .

Check in between..

If it becomes too dry ,sprinkle  water.

It should not be watery – it should look juicy or saucy .

Once done garnish with coriander and grated paneer.

Veg jalfrezi is ready.serve with roti or naan or simple pulao.

NOTES

1.     You can also use in in rolls /sandwiches .

2.     Vegetables have to be chopped leghthwise .

3.     Capsicum add flavours.

4.     We need 4 or 5 cups of mixed veges of our choice.

5. Instead of frying you can boil the veges OR cook it in the masala .

6.  Shallow frying enhances the taste .The veges should not be very soft .It should have the crunch.
