                                          CHINESE VEG MANCHOW SOUP

manchow soup recipe is a vegetable manchow soup, an Indo-Chinese manchow soup which is hot and spicy . It is famously served an Indian street food. Manchow Soup is another popular soup recipe from Indian chinese cuisine. This hot and spicy veg soup is perfect to serve as an appetizer 

INGREDIENTS

  • Oil – ½ tbsp.
  • Garlic + ginger finely chopped – 1 1/2 tbsp
  • Green chilly finely chopped – 1 tsp or as per ase
  • Finely chopped cabbage – 2 tbsp
  • Finely chopped carrot – 2 tbsp
  • Finely chopped white onions [ spring onion] – 2 tbsp
  • Greens of spring onion for garnish
  • 2 bsp cornflour dissolved in water -1/2 cup
  • Salt as per taste
  • Black pepper powder – ¼ tsp
  • Soya sauce -1 ½ tbsp.
  • Vinegar – 1 tsp
  • Vegetable stock – 4 cups
  • Fried noodles

PREPARATION

  1. For vegetable stock – boil  roughly chopped veges like carrot, celery, cauliflower, onion, tomato, cabbage etc [what ever veges you have] in 6-7 cups of water for 20 mins  OR make 4 cups of stock by using 2 maggi magic cubes [veg or non veg ]

  3. Make it in bulk at home and store it as it tastes much better than the  readymade ones.

METHOD

Heat the oil in a pan.

Add the onion + garlic + ginger + chilli and saute on high flame for few seconds.

Now add the veges carrot + cabbage + mushroom  and saute for 1 -2 mins.

Add the vegetable stock and mix well.

Add the soya sauce + salt +vinegar + pepper pwdr and cook by continuously stirring it for 2 mins.

Now add the cornflour mixture and cook for 1-2 minutes.[keep stirring]

Garnish with spring onion greens.

Serve hot by topping with the fried noodles.

NOTES

  1. Its ok if you don’t have stock use plain water or use maggi magic cubes.
  2. Be careful while adding cornstarch , as the soup has to be watery with a smooth texture and not very thick.
  3. You can add finely chopped coriander leaves for Indian touch.
  4. Keep all things ready before you start cooking.
  5. Vegetables should not be overcooked ,it has to be crunchy.
  6. You can also a pinch of ajinomoto
  7. You can also add baby corn , capsicum, celery,beans etc .
  8. For chicken manchow use chicken stock and boiled & shredded chicken pieces.
  9. Use less oil or it floats in the soup.
