Veg schezwan fried rice

                                                                                             VEG SCHEZWAN FRIED RICE RECIPE

Ingredient

  • Cooked rice – 3 cup
  • Finely chopped onion – 2 tbsp
  • Finely chopped green chilli as per taste
  • Garlic finely minced – 1 tbsp
  • Chopped veges – 1 cup [small diced carrot ,beans, cabbage]
  • Schzewan sauce –  2 or 3 tbsp –    https://maryzkitchen.com/schezwan-sauce-recipe/
  • Soya sauce – 1 tsp
  • tomato ketchup – 1 tsp
  • Vinegar – 1/2 tsp
  • Pepper powder – 1/4 tsp
  • Oil – 2 tbsp [I prefer olive oil for Chinese]
  • Salt to taste
  • Dark orange food colour – a generous pinch [optional ]
  • Finely chopped leaves of spring onion for garnishing
  • AJINOMOTTO A PINCH [ optional ]

PREPARATION-

Rinse rice in water for 3 – 4 times. Soak it for 20-30 mins. Soaking makes the rice longer and rice separates easily while cooking. For 1 cup rice boil it in 5 cup water with salt . Cook till they are 90% done. Drain the rice in a net  kind of vessel. Keep the rice aside for 10-20mins to dry. [don’t overcook ,it should be 90 % done].

METHOD

Heat oil in a pan/kadai.

Add the green chilli + garlic and saute for few minutes.

Add the onions and fry for few seconds.

Add the carrot and beans ,stir fry  for sometime.

Add the cabbage and fry for few seconds.

Don’t overcook the veges ,it should have the crunch .

Add the schezwan sauce + soya sauce + vinegar + tomato + food colour and mix well .

Add pepper powder and adjust salt and cook for 1 minute while stirring.

Add the rice and mix well.

Cook for 1  min.

Garnish with spring onion green.

Non vegetarian can either mix in scrambled egg or boiled shredded chicken or place omelette on top while serving.

Serve it hot with any Manchurian gravy.

NOTE

  1. You can add other veges like capsicum, mushroom, cauliflower, broccoli, green peas and also paneer.
  2. In hotels they add lot of orange colour.
  3. Veges should be finely chopped.
  4. Veges should not be fully cooked it should be crunch.
  5. Non vegetarian add boiled and shredded chicken while adding vegetable.
  6. You can cook and keep the rice in fridge a day before making .
  7. You can also used leftover rice.
  8. For instant schezwan sauce grind red chillies + ginger +garlic + tomato sauce with little water into a fine paste. Saute in oil till raw smell leaves.
