INGREDIENTS

  • Wheat flour – 1 cup
  • Rice flour – ¾ cup
  • Curd – 2 tbsp
  • Grated ginger – 1 tsp
  • Finely chopped chilli – 2
  • Finely chopped curry leaves – few
  • Jeera – 1/2 tsp
  • Salt as per taste
  • Water – approximately 4 cups
  • Oil or ghee to fry the dosa

METHOD

Take all the above ingredients in a big bowl.

Add water and make a smooth batter without any lumps using hands .[ batter should be slightly thin than the regular dosa batter , not very watery ]

Heat a dosa pan on medium flame.

When hot , Wipe it wet cloth .

Pour a ladle of batter and spread it into thin or thick dosa.

Drizzle little oil around the dosa and cook till it browns and becomes crispy at the edges.[wheat dosa takes time to cook]

Flip the dosa on the other side and cook.

Once done remove and serve hot with any SouthIndian accompaniments , sambar

Before making the next dosa , mix the batter well.

NOTES

  1. It is difficult to spread the batter , be careful. You can spread the dosa like the rava dosa.
  2. You can pour a ladle of batter in the centre and swirl the pan.
  3. You can also add finely chopped onions , jeera ,coriander leaves, crushed black pepper .
  4. You can also temper the batter with  oil + mustard seeds + jeera to the batter.
  5. If it becomes very watery add flour and adjust the consistency.
  6. Instead of water we can use buttermilk to make the batter.
  7. You can also make with combination of wheat flour and ragi flour.
  8. You can take equal quantity or wheat flour and rice flour.
