PALAK PANEER STUFFED PARATHA

GREEN PALAK DOUGH 

 

INGREDIENTS 

  • Wheat flour 3 cup
  • Palak – 3 cup
  • Green chilli – 2
  • Oil – 3 tsp for kneading
  • Ginger garlic paste – 1 tsp
  • Salt to taste
  • Til – 2 tbsp.
  • Ajwain – 1 tsp [ optional ]
  • Water to knead the dough as required

METHOD

  1. Grind palak, green chilli, ginger + garlic paste + little salt to a very fine paste, using little
    water if required.
  2. Mix together flour + salt +  oil +  ajwain + sesame .
  3. Add puree little by little and mix well .
  4. Add required water and knead into soft but stiff dough .
  5. Keep aside for 10 – 15 mins.

PANEER STUFFING

  • Crumbled / grated paneer – 2 cup [use home made fresh paneer ]
  • Grated cheese – 3 cubes
  • Finely chopped coriander leaves – ½ cup
  • Kasoori methi – 1 tsp
  • Kitchen king masala – 1 tsp OR garam masala pwdr – ½  tsp
  • Pepper pwdr /chilli pwdr – ½  tsp
  • Chaat masala pwdr – ½ tsp
  • Jeera pwdr – ½ tsp
  • Salt to taste

Mix all ingredients well .

METHOD FOR MAKING PARATHAS .

METHOD

Divide the dough into equal balls.

Make balls of the paneer mixture also of same as the size of the  dough.

Roll the dough into small circle and place the paneer mixture ball in the centre.

Bring the edges of the dough together in the centre and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour.

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee or oil.

While frying press it with a spatula.

Once done remove it.

Serve hot with curd, pickle, onion or sweet chutney and green chutney.

 

NOTES

  1. Use home made paneer  – click on the link – How to make paneer at home
  2. The paneer mixture should not be wet.
  3. Instead of paneer try tofu.
  4. While rolling the parathas , roll it gently by dusting flour, so that it does not break.
  5. The dough should be soft so that it is easy to roll.
  6. Why not add mashed potato with paneer.
