HORSE GRAM USLI / HURULIKALU PALYA / KOLLU SUNDAL

Horse gram  is a nutrient-dense, drought-resistant legume high in protein, fiber, iron, and antioxidants. Its primary benefits include promoting weight loss, aiding digestion, managing diabetes due to its low glycemic index, and supporting kidney health by potentially reducing kidney stones. It is often used in traditional medicine for respiratory issues and in warming winter diets. 

INGREDIENTS

  • ½ cup Kollu / Horse gram
  • 1 small onion finely chopped
  • 1 small carrot grated
  • 2 tablespoon Grated coconut
  • 1 tablespoon Coriander leaves
  • Salt
  • 2 teaspoon Oil
  • 2 OR 3 red chilli broken
  • ½ teaspoon Mustard
  • 1 pinch Asafoetida
  • 1 sprig Curry leaves

METHOD

Soak kollu overnight or at least 6-8 hours.

Pressure cook with enough water+ salt  for 4 to 6 whistles . Don’t over cook.It should be soft but in shape.

Drain the excess water and use it for rasam /soup/sambar.

In a kadai/pan, heat oil. Add mustard seeds and let it splutter.

Add few curry leaves + red chilly broken + asafoetida and give a stir.

Add finely chopped onions and stir fry for amin.

Now add the grated carrot and mix well.

Saute for a min .

Then add cooked kollu toss it well. Adjust salt .

Add grated coconut, toss it well and cook for a min and switch off.

Kollu Sundal ready!

NOTE – We can add lemon juice and sugar also.
