Capsicum pepper prawns

INGREDIENTS

  • Clean prawns – 1 cup
  • Red chilli pwdr – ½ tsp
  • Turmeric – a tiny pinch
  • Green capsicum chopped – 1
  • Onion chopped – 1
  • Ginger garlic paste – 1 tsp
  • Chopped green chilli – 1 [optional ]
  • Oil – ½ or 1 tbsp [olive oil ]
  • Freshly ground black pepper – 1 tsp or as per taste
  • Soya sauce – 1 tsp [ optional ]
  • Salt to taste
  • Spring onion greens finely chopped for garnish

PREPARATION

  1. Peel the prawns , slit the prawns to remove the black intestine .Clean ,wash and rinse in water. Drain the excess water and wipe it with kitchen towel.
  2. Marinate the cleaned prawns with red chilli pwdr + turmeric + little salt and keep aside for sometime .
  3. Heat 1 tsp oil in a pan ,add the marinated prawns and stir fry for 4 to 5 mins till the prawns sweat and complete water evaporates , remove and keep aside.

METHOD

Heat 1 tbsp oil in a pan ,add the onions and fry till translucent .

Add the ginger garlic paste and fry till raw smell leaves.

Add capsicum and fry for few minutes .[capsicum should not become soft ,it should have the crunch ]

Add pepper pwdr + salt and mix well .

Add the cooked prawns,  mix well and stir fry for few minutes .

Add the soya sauce and mix well.

Stir fry for a min till the prawns gets blended well.

Off the flame and garnish with finely chopped onion greens .

Serve as a starter or a stuffing for any roll / frankie  .

NOTES

  1. You can use any prawns .
  2. Don’t overcook the prawns .
  3. Instead of ginger garlic paste you can just add 1 2 tsp of finely minced garlic.
  4. Adjust spice according to taste .
  5. I added more turmeric by mistake .Pls add less .
  6. Instead of spring onion greens you can use coriander leaves .
