PARATHA WITH BATATA VADA STUFFING

INGREDIENTS FOR THE STUFFING

  • Potato – 4 big
  • Oil – 1 tbsp
  • Garlic + green chilli paste – 1 ½  tbsp or as per taste
  • Turmeric pwdr – ½  tsp
  • Asafoetida – a pinch
  • Finely chopped coriander leaves – ½ cup or more
  • Salt as per taste

PREPARATION

Pressure cook the potatoes till well cooked , peel and mash it till a smooth texture without any lumps.

METHOD FOR MAKING THE STUFFING

Heat  oil in a pan .

Add the garlic + chilli paste and fry till raw smell leaves.

Lower the flame.

Add turmeric pwdr + asafoetida + coriander leaves ,fry till the leaves shrink.

Add  salt + mashed potatoes and mix well till the potatoes get mixed with the masalas .

Off the flame and allow it to cool .

Refrigerate till use .

INGREDIENTS FOR THE DOUGH

  • Wheat flour – 1 ½ or 2  cup
  • Oil to knead the dough – 2 tsp
  • Oil or ghee to fry the paratha
  • Salt to taste

Mix wheat flour + salt + oil + water and make a soft dough and keep aside for sometime.

METHOD TO MAKE THE PARATHAS

Divide the dough into equal balls.

Roll the dough into small circle and place enough of potato mixture in the centre.

Bring the edges of the dough together in the center and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour.

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee or oil.

While frying press it gently with a spatula.

Once done remove it.

Serve hot with home made butter , curd, pickle, onion or sweet chutney and green chutney.

NOTES

  • The potato mixture should be smooth like a dough .You can grate the boiled potato .
  • You can also add grated cheese in the mixture . On top of the potato mixture place the grated cheese as required.
  •  While rolling the parathas , roll it gently by dusting flour, so that it does not break.
  • The dough should be soft so that it is easy to roll.
