STREETSIDE TIKKA FRANKIE

INGREDIENT

  • Maida flour – 2 cup
  • Salt to taste
  • Oil – 1 tbsp to knead the dough
  • Oil to roast the chapati
  • Paneer tikka / chicken tikka / mushroom tikka for stuffing as required
  • Olive oil – 1 tbsp
  • Finely sliced onion – 1
  • Finely sliced capsicum – 1/2 cup
  • Finely sliced cabbage – 1/2 cup
  • Frankie masala pwdr [chilli pwdr + amchur pwdr + chaat masala pwdr + garam masala pwdr ] – 1 tsp [ optional ]
  • Soya sauce – 1tbsp
  • Chilli sauce – 2tbsp
  • Tomato ketchup – 3 tbsp
  • Finely chopped coriander leaves – 2 tbsp
  • Chaat masala as required
  • Grated cheese as required
  • Egg – 1 for egg paratha

PREPARATION

  1. Take flour + salt + 1 tbsp oil in a big plate and mix well.
  2. Slowly add water and make a soft pliable dough .
  3. Cover and keep aside .

METHOD FOR MAKING THE STUFFING

Heat oil 1 tbsp  in a pan ,add onion and stir fry .

Add capsicum + cabbage + salt  and stir fry . [should not get cooked ,it should have a crunch ]

***Now you can add the frankie masala pwdr  .

Add soya sauce + chilli sauce + ketchup + 1 or 2 tbsp water .

Mix well and add the tikkas and mix well.

The stuffing has to be wet ,so add sauces accordingly .

Add coriander leaves and off the flame .

  3. Mushroom tikka / tandoori
  4. Crispy prawns in tikka masala.

METHOD FOR ASSEMBLING

Divide the dough into equal portions of lemon size .

Roll each into soft ball , flatten the ball ,dust with dry flour and roll it into thin chapatis .

Place it on a hot tava and cook on both sides till golden spots appear .

Drizzle few drops of oil while roasting .

Once done remove on a assembling board .

If you want you can spread a layer of ketchup and chilli sauce .

I did not add as my stuffing was wet .

Place a layer of tikka stuffing in the middle .

Sprinkle little chaat masala .

Spread a layer of grated cheese .

Fold the ends and bring over lap in the centre over the stuffing OR roll it .

Wrap it halfway with foil / butter paper / napkin .

EGG TIKKA FRANKIE .

Roast a chapati on both sides till half done .

Now lower the flame , pour half of the beaten egg + salt .

Spread it and cook for sometime .

Drizzle oil and flip .

Cook till the egg is done.

Now use it for stuffing .

NOTES

  1. For dough ,you can use wheat flour + maida .
  2. Adjust sauces /spices as per taste .
  3. Cheese is optional .
  4. We can use regular chapati or left over chapatis .
  5. You can make half cooked chapatis and use it later while assembling .
