HOMEMADE STRAWBERRY JAM WITHOUT PRESERVATIVES

INGREDIENTS

  • Strawberry puree – 1 cup
  • Sugar – 1/4 cup or as per taste and also depends on sweetness of the fruit
  • Lemon juice – 1 tsp
  • Few drops of strawberry essence and red colour required to enhance the colour and flavour [ optional – I did not add ]

PREPARATION

  1. Wash the strawberries, trim off the leaf part ,hull it and chop it roughly.
  2. ***To hull the strawberry pass a thick strong straw from the bottom of the strawberry to discard the core with the leaf .
  3. Blend it  to a fine puree without adding water . [ no lumps – if you want smooth jam without seeds – strain it through soup strainer , if you want  or use it ]

METHOD

Heat a non stick or heavy bottom pan on medium low flame .

Add the puree + sugar + lemon juice and start cooking on medium flame by stirring .

The sugar will melt and the mixture will start bubbling .

Keep stirring else it may burn .

Cook it for 8 – 10  mins till bubbling stops and mixture thickens .

When you pick the ladle the jam should fall in thick consistency , not pouring consistency .

The mixture will be glossy / shiny .

Don’t over cook else it will thicken like jelly and you will not be able to spread the jam .

Once done off the flame .

Allow it to cool , transfer the jam to a clean container .

NOTES [ DO READ BEFORE YOU START ]

  1. Instead of sugar we can add strawberry sauce / syrup /crush .
  2. I don’t like smooth jam ,love  the crunch of the seeds while eating the bread with jam .
  3. While cooking we can also add few chopped strawberry pieces .
  4. It thickens on cooling also .
  5. Refrigerate and use upto 2 weeks .
  6. If you are not able spread after refrigeration ,you can microwave the jam for few secs.
  7. Same recipe can be tried with pineapple / orange /mango /apple .
  8. Was just thinking why not replace sugar with jaggery .
  9. Amount of sugar can be adjusted as per taste and sweetness of fruit.
  10. I cooked on medium low flame ,don’t cook on high flame .
  11. If you cook it for more time then strawberry jellys will be prepared like mapro falero .
