PUDHINA ALOO
INGREDIENTS
- Boiled aloo – 2 big
- Fresh mint leaves – 1 cup chopped [only leaves ]
- Oil – 1 or 2 tbsp
- Jeera – 1 tsp
- Turmeric – ¼ tsp
- Coriander pwdr – 1 tsp
- Chilli pwdr – ½ tsp
- Chilli flakes – ½ tsp
- Garam masala or kitchen king masala pwdr – ½ tsp
- Chaat masala – ¼ tsp
- Lemon juice – 1 tsp or as required
METHOD
Pressure cook the potatoes till done ,not mushy .
Peel and chop it into small cubes .
Heat oil in a pan ,add jeera and let it splutter .
Add the potatoes and stir fry for 5 to 6 minutes on medium flame till the outer side becomes bit crispy .
Add all the masala pwdrs and salt and stir fry for a minute till the potatoes are well coated with the masala pwdr.
Add the mint leaves and mix well.
Stir and cook for few seconds till the leaves shrink .
Off the flame and add the lemon juice.
Serve as side dish .
It tasted like mint bujia for me .
NOTES
Adjust masala as per taste .
Don’t add too much of mint leaves as the sabji will get strong flavour .
