Egg idli upma
EGG IDLI UPMA
INGREDIENTS
- Idlis – 4
- Oil – 1 tsbp
- Onion finely chopped – 1
- Green chilli – 2 or as per taste
- Curry leaves – few
- Grated ginger – 1 tsp
- Tomato finely chopped – 1
- Turmeric – a pinch
- Coriander leaves – 2 tbsp
- Egg – 2
- Chaat masala pwdr / egg masala pwdr – ¼ tsp [optional ]
- Lemon juice
PREPARATION

- Beat the egg in a bowl and keep aside .
METHOD
Heat oil in pan ,add onion + green chilli + curry leaves .
Fry till translucent .
Add tomato + turmeric + salt and fry till soft.
Add coriander leaves and give a stir .
Add the beaten egg and stir well .
Once the egg is cooked ,add the crumbled idlis and mix well till everything blend well.
Stir and cook for a min .
Drizzle few drops of water for moistness ,else it will be dry .
Once done off the flame ,garnish with more coriander leaves .
Sprinkle little chaat masala or egg masala pwdr .[ optional ]
While serving ,drizzle few drops of lemon juice .
VARIATION – you can make masala upma ,by adding masala pwdrs like chilli pwdr /garam masala pwdr /coriander pwdr .
