NARALI BHAAT RECIPE / SWEET JAGGERY COCONUT RICE

Narali Bhat means sweet coconut rice is a traditional Maharashtrian recipe,made on the occasion of Narali pournima means Rakshabandhan fastival.

NARALI BHAAT RECIPE / SWEET JAGGERY COCONUT RICE RECIPE

INGREDIENTS

  • Rice of good quality – ½ cup
  • Cardamom – 1
  • Clove – 2
  • Cinnamon – tiny piece
  • Ghee – 2 tsp
  • Saffron soaked in 2 tbsp water  /milk – generous pinch
  • Water – 2 1/2 cup
  • Salt a pinch

METHOD FOR COOKING RICE.

[ I like to cook the rice with the spice so that the rice absorbs the flavour of rice ]

Clean ,wash ,rinse and soak the rice for 30 mins .

Take rice + cardamom + clove + cinnamon+ ghee + water + salt in a pan

Keep on medium flme and allow it to cook .

Stir in between .

Cook till 90 percent done

Drain the water and keep the rice aside in a colander.

FOR NARALI BHAATH

INGREDIENTS

  • Ghee – 2 tbsp
  • Freshly grated coconut – ½ cup
  • Grated or powdered jaggery – ½ cup
  • Cardamom pwdr – ½ tsp
  • Dry fruits – 2 tbsp [ almonds /cashew / raisins ]

METHOD

Heat ghee in a pan add dry fruits  and fry till light golden .

Remove and keep aside .

Lower the flame and add jaggery and cook till it melts .

Add coconut + cardamom pwdr + saffron mixture and mix well .

Stir fry for a min

Add the cooked rice and stir well .

Mix gently ,so that the rice doesn’t break .

Cover and cook for 5 mins and off the flame .

Cover and let it rest for 10 mins .

Open and fluff the rice gently ,add the fried dry fruits .

Narali bhaat is ready to serve .

NOTES

  1. Instead of saffron ,we can use food colour.
  2. Instead jaggery we can use sugar .
  3. We can also add a pinch of nutmeg .
