Ghotleli vangyachi bhaji is a spicy mashed brinjal sabji which is very popular recipe from Jalgaon – Khandesh region in Maharashtra, India. This brinjal sabji with dal bati or dal roti is very popular menu in khandesh region for most of the social events. Today I am going to show you how to make mashed brinjal sabji recipe.

INGREDIENTS

METHOD
Cut all brinjals and soak in water
Heat oil in a pan .
Add jeera + mustard seeds and let it crackle .
Add ginger + garlic + green chilli + curry leaves + turmeric and stir fry for a min .
Add brinjal and mix well
Stir fry for 2 mins .
Add garam masala powder and mix well.
Add 1 cup water and mix well .
Cover and cook till brinjals soften .
Open the mix well.
Now mash it well with a masher .
Add ¼ cup and adjust salt , mix well .
Simmer on low flame 5 mins till oil floats on top .
Finally garnish with coriander leaves .
Mashed brinjal sabji / Ghotleli vangyachi bhaji is ready to serve. . Dont forget to squeeze lemon on it while serving to enhance the taste.
