DAHI BHINDI
Okra is a nutritious food with many health benefits. It’s rich in magnesium, folate, fiber, antioxidants, and vitamin C, K1, and A. Okra may benefit pregnant women, heart health, and blood sugar control.
Ladies finger, apart from being great in taste, contains a fibre called pectin. It is this very fibre that helps in keeping the cholesterol levels low (especially bad cholesterol), by reducing the absorption of cholesterol by the gut and removing any deposits and clots.
INGREDIENTS
- Tender Ladies finger – 15 or 20
- Curd – 1 cup fresh
- Oil – 1 tbsp for frying the ladies finger
- Oil + ghee – 1 ½ tbsp
- Finley chopped onion – 1
- Finely chopped tomato – 1
- Chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ½ tsp
- Coriander pwdr – 2 tsp
- Jeera – 1 tsp
- Broken red chilli – 1 or 2
- Curry leaves – few
- Salt as to taste
PREPARATION
- Clean ,wash and pat dry the ladies finger . Trim the top and tail .If they are small no need to cut OR chop them into half OR you can even slit them.
- Fry the ladies finger till light brown and the sticky texture goes [8 – 10 mins ]. Keep aside .
- Whisk the curd + salt + 1 cup water well .
- Mix the red chilli pwdr + turmeric + coriander powder with 3 tbsp water and keep aside.

METHOD
Heat oil in a pan ,add the jeera and let it splutter .
Add curry leaves + red chilli .
Add the onion and fry till translucent.
Add tomatoes and fry till they become soft .
Add the masala paste and fry till oil separates .
Lower the flame and add the curd and mix well.
Add the fried ladies finger and mix well.
Stir and Cook for a minute and off the flame.
Serve with hot rice .
Notes
- Don’t boil the gravy or the curd will curdle .
- Water can be adjusted as per the consistency you want.
- You can grind little fresh coconut with the curd .
- You can also add besan to the curd .
- You can also grind cashew with curd for rich flavour or shahi taste.
- You can also add a tsp of ginger garlic paste.
- In the end you can add kasoori methi also .
