Khuska biryani rice
KHUSKA RICE
INGREDIENTS
- Basmati rice – 1 cup
- Veg or non veg stock – 1 cup
- Water – 1 ¼ cup or 1 ½ as required
- Ghee – 2 tbsp
- Few whole garam masala – [ shah jeera /cardamom /clove /bay leaf /cinnamon /star anise ]
- Onion sliced thinly – 1 big
- Green chilli – 1 or as per taste
- Ginger garlic paste – 2 tsp
- Finely chopped mint leaves + coriander leaves – ½ cup
- Lemon juice – 2 tsp
- Salt to taste
PREPARATION
- Clean ,wash ,rinse and soak the rice for 30 mins.
- Prepare veg or non veg stock OR use maggi cubes .I used 1 chicken magic cube dissolved in 1 cup hot water .
METHOD
Heat ghee in a thick bottom pan ,add whole garam masala and fry .[ don’t burn it ]
Add onions + chilli and fry till translucent .
Add ginger garlic paste and fry till raw smell leaves .
Add mint + coriander leaves and fry till it reduces .
Add the soaked and drained rice and mix well .
Stir fry for a minute.
Add stock + water + salt and give a stir .
Cover the pan and cook till water reduces upto rice level .
Now place a hot tava below the pan .
Cover the pan with a foil or towel .
Put on dum [ low flame ] for 7 – 8 mins .
Off the flame , don’t open immediately .
Open the foil after 10 mins and give a gentle stir .
*****Discard the star anise else it will infuse more strong flavor .
Garnish with fried onions / chopped coriander leaves / fried dry fruits etc
Serve with any veg / non veg gravy .
NOTES
- 1 cup rice : 2 ¼ water
- If not using stock then use plain water .Stock adds flavor .
