ACHARI BHINDI
Achari Bhindi is a tangy and spicy okra curry which pairs perfectly with any Indian bread or rice.
Okra is a nutritious food with many health benefits. It’s rich in magnesium, folate, fiber, antioxidants, and vitamin C, K1, and A. Okra may benefit pregnant women, heart health, and blood sugar control.
INGREDIENTS
- 1 big onion sliced
- 250 gms bhindi / ladies finger
- 2 tbsp Oil /mustard oil
- 2 – 3 green chillies
- 1 tsp coriander powder
- 1/2 tsp chaat masala
- 1/2 tsp dry mango / amchur powder
- 1/2 tsp turmeric powder
- 1 tsp saunf powder
- 1/2 tsp red chilli powder
- 1/8 tsp methi dana [ optional ]
- 1 pinch red chilli flakes (optional)
- 1/2 tsp ajwain
- Salt as per taste
- Coriander leaves for garnish

Clean ,wash and pat dry the bhindi .Chop off the top and bottom and slit it lengthwise into 4.
**TIP- spread on a plate ,keep it below fan for 15 to 20 mins ,so that it dries a bit and stickiness can be avoided.
Heat oil in a pan and add cumin seed , methi dana and ajwain ,allow it to crackle .
Add chopped onion, green chilli stir it till light brown colour .
Then add ladyfinger fry for 2 min on high flame .
add masala powder + salt and stir fry for 2 mins .
Cover and cook on low flame for 5 to 6 mins . Stir in between .
Now open and stir fry till the bhindi is cooked .
Garnish with coriander leaves.
Serve with any Indian bread or serve as side dish for rice.
NOTES
- Adjust salt accordingly as we are adding chaat masala.
- We can also add a tsp of grated ginger and garlic.
- Adjust spices as per your taste .
- Instead of amchur pwdr ,we can add lemon juice in the end .
