BATASA / HOME MADE GATHI FOR GUDI PADWA /SUGAR CANDY /SAKHRECHA GATHI

INGREDIENTS –
- 1 Cup Sugar
- ¼ Cup Water
- ½ tsp ghee
- Food colour
- Thread /twine
- Foil or any shaped silicon mould or any greased moulds
- Any decoratives like gems /dry fruits /or even sequence as I have used
METHOD
Place the moulds on the kitchen platform with the thread inserted as shown in the pic .
Distance between 2 moulds should be equal .
Leave little thread on both ends .
Take sugar + water in a steel pan and heat it .
Let it boil for 8 to 10 mins on low and stir continuously
The syrup will thicken .
Add the ghee and mix well
Check the consistency by pouring a drop on a tilted plate . If the syrup runs down means
you have to cook more.
The right consistency is when the drop doesn’t move on a tilted plate.
Add food colour or essence if required .
Once the syrup thickens , be quick .
Pour a small spoon full of mixture into the mould with thread in middle .
Once done with pouring ,let it cool for 5 – 10 mins .
It solidifies quickly .Once done demould it .
The gathis are ready to decorate the gudis.
NOTES
- To get gathis like readymade ones ,we need to add baking soda or eno to get the bubbles.
- HOW TO ADD BAKING SODA OR ENO INSTEAD OF GHEE – Add ¼ tsp baking soda OR ½ tsp eno instead of ghee and stir. The mixture will become porous / bubbly and bright white colour.
- Here we have replaced it with ghee . the tastes differ .with ghee the taste is better .
- Instead of 1 colour you can make of 2 or 3 colours also .
- We can also add essence to it .Rose essence tastes good .
