Brown bread subway sandwich
BROWN BREAD SUBWAY SANDWICH
INGREDIENTS
- Milk – 1/2 cup
- Water – 1/2 cup
- Active dry yeast – 1 1/2 tbsp
- Honey – 1 1/2 tbsp [instead of honey you can use sugar ]
- Oats – 1/2 cup + extra for topping [ you can grind the oats to coarse pwdr or use it directly ]
- Butter melted – 2 tbsp
- Whole wheat flour / multi grain flour – 1 1/4 cup [not very fine]
- Maida – 1 cup
- Salt to taste [roughly around 1 tsp ]
PREPARATION [very imp part – proofing of yeast ]
- Take warm milk + warm water in a bowl, add honey + yeast and mix well. [temperature of water + milk should be such that you can hold your finger in the liquid upto 10 counts maximum – either less or more will not wrk . ****You can microwave the milk + water for 30 or 40 seconds
- Cover and keep aside for 10 mins for proofing . After 10 mins the mixture will become frothy .***If the yeast doesn’t becomes frothy ,then you have to discard and repeat the procedure .
- Take wheat flour + maida + oats + salt + butter in a big plate and mix well for 2 mins with clean hands so that all ingredients blend together well .
METHOD
Now pour the yeast mixture in the flour mixture and start mixing .
Knead it into a smooth sticky dough with hands .[knead it for 10 – 12 mins ]
The dough should not be tight .Use more milk or water if required .
Cover and keep the dough in a bowl for minimum 1 hr or more .
The dough will be doubled .
Remove the dough and punch it .
Knead it for few seconds.
Divide the dough in 4 equal portions .
Roll each portion into a cylindrical shape without any cracks.
Arrange it on a greased baking tray
Cover it with a damp cloth for minimum 1 hr .
Again the dough will rise slightly .
Take a knife and give few slits slightly .[not deep ]
Preheat the oven at 200 * C
Rub little milk over the loaf and sprinkle the oats + mixed herbs .
Bake the bread for 40 mins . [ baking time depends on how big the loaf is and also the oven ]
Check after 25 or 30 mins . Dont over bake it .
The loaf should become brown from all sides and hollow when tapped .
Remove and allow to cool .
*** As we r using wheat flour the bread will be slightly dense .For good result use fresh yeast – 10 gms for 250 gms flour .
STUFFING FOR THE SANDWICH
- Sliced black olives
- Sliced cucumber
- Sliced onions
- Sliced tomato
- Iceberg lettuce
- Sliced capsicum
- Cabbage shredded
- Jalapeno
- Mustard sauce
- Mayonnaise
- Chilli sauce
- Tomato sauce or ketchup
- Cheese slice or grated
- Fried chicken / salami / boiled egg / panner masala fried or tikka / tikki or cutlets / boiled corn etc -You can use any of these as a main stuffing .
- Use any of the veeba dips
- Use mint chutney for Indian taste
- You can use beaten hung curd
- Salt + chaat masala or oregano and pepper to sprinkle over the raw veges
ASSEMBLING OF SUBWAY SANDWICH – Sandwich stuffing and quantity depends on your taste / choice – increase or reduce as you wish .
Slice the bread lengthwise.
You can toast the bread if you want.
Take one side of the bread,
Layer with lettuce , carried on by other ingredients one by one .
Sprinkle salt + pepper over the veges layer .
Be generous while pouring the dips or mayo – else it will be very dry .
Sandwich it with the other side of the bread .
Serve immediately else it will become soggy .
