Capsicum pepper prawns
CAPSICUM PEPPER PRAWNS
INGREDIENTS
- Clean prawns – 1 cup
- Red chilli pwdr – ½ tsp
- Turmeric – a tiny pinch
- Green capsicum chopped – 1
- Onion chopped – 1
- Ginger garlic paste – 1 tsp
- Chopped green chilli – 1 [optional ]
- Oil – ½ or 1 tbsp [olive oil ]
- Freshly ground black pepper – 1 tsp or as per taste
- Soya sauce – 1 tsp [ optional ]
- Salt to taste
- Spring onion greens finely chopped for garnish
PREPARATION
- Peel the prawns , slit the prawns to remove the black intestine .Clean ,wash and rinse in water. Drain the excess water and wipe it with kitchen towel.
- Marinate the cleaned prawns with red chilli pwdr + turmeric + little salt and keep aside for sometime .
- Heat 1 tsp oil in a pan ,add the marinated prawns and stir fry for 4 to 5 mins till the prawns sweat and complete water evaporates , remove and keep aside.
METHOD
Heat 1 tbsp oil in a pan ,add the onions and fry till translucent .
Add the ginger garlic paste and fry till raw smell leaves.
Add capsicum and fry for few minutes .[capsicum should not become soft ,it should have the crunch ]
Add pepper pwdr + salt and mix well .
Add the cooked prawns, mix well and stir fry for few minutes .
Add the soya sauce and mix well.
Stir fry for a min till the prawns gets blended well.
Off the flame and garnish with finely chopped onion greens .
Serve as a starter or a stuffing for any roll / frankie .
NOTES
- You can use any prawns .
- Don’t overcook the prawns .
- Instead of ginger garlic paste you can just add 1 2 tsp of finely minced garlic.
- Adjust spice according to taste .
- I added more turmeric by mistake .Pls add less .
- Instead of spring onion greens you can use coriander leaves .
