CHILLI CHICKEN RECIPE
INGREDIENTS
- Boneless chicken – 500 gm [breast ]
- Fresh egg – 1
- Maida – 1/2 cup
- Corn flour – 3 tbsp
- Chilli pwdr – 1 tsp
- Pepper pwdr – 1/4 tsp
- Ginger garlic paste – 1 tsp
- Tandoori food colour as required
- Oil for deep frying
- Schezwan sauce – 1 tbsp
- Chilli sauce – 2 tbsp
- Ketchup – 1 tbsp
- Soya sauce – 1 1/2 tsp
- Vinegar – 1 tsp
- Cornflour slurry – 2 tsp cornflour mixed with 1/2 cup water
- Olive oil – 1 tbsp
- Finely minced garlic – 1 tbsp
- Finely minced ginger – 1/2 tsp
- Finely minced green chilli – 2 tsp
- Onion cubes separated – 1
- Capsicum cubes – 1
- Sugar – 1/2 tsp
- Ajinomoto – a pinch [ optional ]
- Finely chopped spring onion greens for garnish
- Salt to taste
PREPARATION
- Clean wash and pat dry the chicken .Chop it into small cubes.
- Make a wet mixture of schezwan sauce +ketchup+chilli sauce+ soya sauce + vinegar + 1 tbsp water .
- Make a slurry of 2 tsp cornflour mixed with 1/2 cup water .
METHOD FOR FRYING THE CHICKEN
Make a batter of beaten egg + maida + cornflour + chilli pwdr + ginger garlic paste + pepper pwdr + food colour + salt ,add water and make a thick batter
Add the chicken cubes into the batter an mix well .
You can keep this in the fridge for margination .
Heat oil in a deep pan for deep fry .
When oil is hot ,slide in few coated chicken it and fry it till crispy .
It takes less time as the chiken cubes are small.
Drain and remove the fried chicken.
METHOD FOR MAKING THE SAUCE
In another pan ,heat olive oil and add ginger garlic and green chilli.
Stir fry for few seconds – colour should not change .
Add the onions and stir fry .
Add the capsicum and stir fry .
We don’t have to the cook the veges ,they should have the crunch .
Now add the sauce mixture + sugar + salt+ ajinomoto and mix well .
Add the corn flour slurry and mix well.
Stir and cook till the sauce becomes glossy / shiny .
Now add in the fried chicken cubes and mix well till all the cubes are coated well with the sauce .
Finally garnish with spring onion greens and off the flame.
Serve hot as starter .
NOTES
- Same recipe goes for paneer /mushroom /soya chunks .
- For gravy type add more water and increase the 1 tsp cornflour also.
- Ajinomoto and food colour is optional .
