Creamy roasted low carb cauliflower soup

CREAMY ROASTED CAULIFLOWER SOUP  [ low carb soup for dinner ]

This simple soup of roasted cauliflower is so smooth and creamy, 

Cauliflower is considered a superfood because of its nutrient-rich content. It is high in fiber, and vitamins B and C. It also contains high concentrations of carotenoids (antioxidants) and glucosinolates. Although both of these compounds have anti-cancer effects, the glucosinolates have generated the most interest.

Cauliflower is nutrient dense. One cup of raw cauliflower provides over 75% of the daily minimum target for vitamin C.

INGREDIENTS

  • Cauliflower – 1 medium size
  • Onion – 1 big chopped into 2
  • Garlic – 4
  • Olive oil – 1 tbsp
  • Jeera pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Pepper pwdr – ½ tsp
  • Salt
  • Stock – 3 or 4 cup [ I used maggi magic cube ]

METHOD

Clean , chop ,wash the cauliflower well .

Pat dry and transfer to a  baking tray .

Apply oil all over the cauliflower ,sprinkle jeera pwdr  +  coriander pwdr + pepper + salt all over.

Spread the cauliflower in a single layer for even roasting .

Now apply some oil over the onions and keep on the tray .

Now apply oil over the garlic without removing skin  , wrap it in a foil and keep that also .

Bake it for 30 to 35 mins in preheated oven till colour changes a bit .

Discard the skin of garlic and outer layer of onion .

Transfer to a mixie jar ,

Add stock and blend well into fine puree.

Adjust water / stock as per the consistency [ thick or thin ] you want .

Transfer to a serving bowl .garnish with roasted cauliflower and serve hot .

Cauliflower may have cancer-fighting power and packs a noteworthy nutrition punch with 1 cup of fresh cauliflower being an excellent source of vitamins C and K and a good source of fiber, folate, and vitamin B6.

There may be some unwanted effects of consuming cauliflower, especially if it is eaten in excess. Bloating and flatulence: Foods that are high in fiber may cause increased bloating and flatulence.
