Dhokla upma
DHOKLA UPMA / AMIRI KHAMAN
INGREDIENTS
- Left over or fresh khaman dhokla crumbled – 2 cup
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Sesame seeds – 1 tsp
- Onion very finely chopped – 1
- Finely grated ginger – ½ tsp
- Green chilli chopped – 1 or as required
- Curry leaves – few
- Freshly finely chopped coriander leaves
- Grated fresh coconut – 2 or 3 tbsp
- Very fine Nylon sev
- Pomegranate seeds – 2 tbsp
- Sugar – ½ tsp
- Lemon juice as required
- Asafoetida – a pinch
- Salt to taste
PREPARATION
Crumble the dhokla with clean hands .
METHOD
Heat oil in a pan , add mustard seeds and let it crackle .
Add sesame seeds and fry for few seconds.[ don’t burn it ]
Add onion + green chilli + ginger + curry leaves and fry till translucent .
Add in the crumbled dhokla + sugar + salt and mix well .
Cover and cook for a minute on low flame. [you can sprinkle few drops of water if you want , if the dhokla is too dry ]
Drizzle few drops of lemon juice as required .
Finely garnish with coconut + coriander leaves + sev + pomegranate seeds .
Serve hot with chutneys.
NOTES
- Instead of sesame you can use chana dal + urad dal .
- Instead of green chilli you can use red chilli.
- Drizzle few drops of water for moist texture.
- Just like sooji upma you can add other ingredients like tomato ,finely chopped beans ,carrot and peas.
