Haldi ki sabji
HALDI KI SABJI
It is an authentic Rajasthani recipe. A winter special dish. Families come together in big numbers and make this dish in bulk .[kilos ]it is said that this dish produces heat in body .
INGREDIENTS.
- Grated raw haldi / Raw turmeric – 3 Cups
- Beaten yogurt – 2 or 2 1/2 Cup
- Chopped onion -1 big
- Grated or finely minced garlic – 2 tbsp
- Chopped Spring onion – 1/2 Cup [optional ]
- Chopped Cauliflower – 1/2 Cup
- Boiled peas – 1/2 Cup
- Chopped Coriander leaves
- Chopped green chillies – 2
- Salt to taste
- Coriander powder – 1 tsp
- Kitchen king Masala / garam masala -1 1/2 tsp
- Kashmiri red chilli powder – 1 1/2 tsp or as per taste
- Ghee pure – 1 cup or more – more the ghee better the taste
METHOD
Peel out the skin of haldi and grate
Now take ghee in a kadhai and roast haldi for 15 – 20 minutes on low heat.[ don’t burn ]
Keep stirring continuously .
Drain and keep a side.
Add garlic + onion + spring onion + green chillies.
Saute for 4-5 minutes on low heat. [don’t burn ]
Add cauliflower and fry till soft .
Add slightly mashed green peas and mix well.
Now add chilli pwdr + garam masala pwdr and mix well.
Add the fried haldi + all veggies and mix well
Add yogurt and stir continue for 5 – 7 minutes on high heat.
Switch off the gas and garnish with Coriander leaves……
