HEALTHY DINK ALIV ATTA LADOO

INGREDIENTS

  • Atta / wheat flour – 1 cup
  • Ghee – ½ cup
  • Sugar – ½ cup fine pwdr
  • Dink / edible gum /gond – 1 tbsp
  • Aliv / halim / garden cress seeds – 1 tbsp
  • Cardamom pwdr – ½ tsp
  • Dry roasted and coarsely powdered dry fruits like badam / cashew / pista – 1 or 2 tbsp [optional ]

METHOD

Sieve the atta and keep aside .

Heat a pan on medium flame , add the halim and roast for 1 minute . [don’t over roast it or burn it ]

Transfer it to a plate .

In the same pan add half of the ghee.

Add the dink and fry till it puffs up completely and becomes crispy – it should not be sticky from inside when you break it .If the puff r big ,just crush it a bit .

Drain and remove .

Add the remaining ghee .

Add the atta , lower the flame and fry till the colour changes and it becomes aromatic . [ keep stirring while frying else it will burn at bottom ]

Off the flame .

When the mixture is warm  add sugar + cardamom pwdr + dry fruits pwdr and mix well .

Add the aliv and dink and mix well with a spatula .

Once you are able to handle the mixture with bare hands , start making ladoos.

Once the ladoos are made allow them to cool .

Store in airtight container .

Shelf life 1 week .

VARIATIONS Instead of roasting the atta in ghee – We can dry roast it and later add hot ghee as wheat flour absorbs lot of ghee .

NOTES

  1. Instead of dry fruits pwdr ,you can add finely chopped nuts .
  2. I added 2 tbsp less ghee.The ladoo was dry .Don’t reduce ghee else the ladoo will stick in the mouth .
  3. You can add 1 tbsp dry dates pwdr .
  4. Instead of sugar ,we can use grated jaggery same amt and add it in the final stage of roasting theflour ,as the jaggery has to melt .
  5. We can make sugar or jaggery syrup and add ,but the ladoos will be hard .
  6. Instead of dry fruits ,we can add roasted white sesame / til .
  7. If the dinks are big ,then crush it.
  8. You can add a tbsp. of desiccated coconut .
  9. Y not add a tsp of cocoa pwdr while making the ladoos for kids .
