Instant sweet lemon pickle
INSTANT SWEET LEMON PICKLE
INGREDIENTS
- Lemon -250 gms
- Red chilli pwdr- 1 tbsp or as per taste
- Jeera pwdr – 1 tsp [optional ]
- Turmeric pwdr – 1 /4 tsp
- Sugar – 200 gms
- Sea salt OR regular salt to taste
METHOD
Clean ,wash ,and wipe the lemons .
Now chop it into 6 or 8 cubes. [quarters ]
Discard the seeds .
Take the lemon in a small bowl which can be kept inside the cooker.
Now add chilli pwdr + red chilli pwdr + jeera pwdr + turmeric pwdr + sugar + salt and mix well.
Take little water in the cooker .
Place a stand .
Keep the bowl covered with lid on the stand .[ bowl has to be covered ]
Now pressure cook the lemons upto 8 – 9 whistles .
Once the pressure releases ,open the cooker.
In the lemon bowl , you will see little juice.
Separate the lemon and juice .
Take the juice in a pan and cook till it thickens.
Allow this syrup to cool .
Now add the cooked lemon pieces into it and mix well.
Transfer the pickle to a clean jar .
Refrigerate and use for 3 or 4 months .
NOTES
- You can also add crushed , roasted whole coriander .
- Instead of sugar we can use jaggery.
- Some also grind the lemon after it is cooked to get a pulpy pickle .
