Italian red beans salad
ITALIAN RED BEANS SALAD
INGREDIENTS
- Water – ¼ cup
- Vinegar – 1 or 1 ½ tsp OR lemon juice
- Finely minced garlic – 1 tsp
- Chilli flakes – ½ tsp
- Mixed herbs / oregano – 1 tsp
- Olive oil – 1 ½ tbsp
- Sugar – ½ tsp
- Mayonnaise – 2 tbsp
- Onion finely chopped – ¼ cup
- Bell peppers [ red / yellow ] chopped – ¼ cup
- Capsicum chopped – ¼ cup
- Deseeded tomato chopped – ¼ cup
- Finely chopped coriander leaves – 2 or 3 tbsp
- Boiled red beans / rajma – 1 or 1 ½ cup
- Salt to taste
PREPARATION
Soak red beans overnight .Next day pressure cook till soft .
METHOD [ refer to the video ]
Take water + vinegar + olive oil + chilli flakes + herbs +sugar + mayo + salt and mix well . [ Italian salad dressing is ready ]
Now add in the other ingredients one by one .
Mix well with clean hands.
Refrigerate for sometime and serve .
NOTES
- U can also added purple cabbage / boiled peanuts /paneer / cheese / veges of choice
- Quantity of ingredients can be adjusted as per your taste.
- You can also roasted skinless peanuts /dryfruits for crunchiness .
- Non vegetarian can add stir fry boneless chicken pieces or boiled egg.
- You can add roasted cumin seeds pwdr for flavour
- Always use hands to mix the salad infact apply little pressure also , so that all the ingredients get mixed well and the flavour is infused.
- Chop the veges finely.
