Leftover pav bhaji dum biryani
LEFTOVER PAV BHAJI DUM BIRYANI
INGREDIENTS
- Leftover pav bhaji – 3 cup [ bhaji should not be very thick ]
- Basmati rice of good quality – 250 gms
- Finely chopped coriander leaves and mint leaves – 1 cup
- Lemon juice – 1 tbsp
- Whole garam masala – few [ star anise ,cinnamon ,clove ,cardamom ,black cardamom etc ]
- Salt
- Food colour if reqd
- Kewra essence – 2 or 3 drops [optional ]
- Fried onions – ¼ cup [ optional ]
- Ghee – 1 or 2 tbsp

METHOD FOR MAKING RICE .
Clean , wash ,rinse and soak the rice for 30 mins .
Boil around 5 to 6 cups of water with the whole garam masala + 3 tsp salt .
** we have to add more salt as , we drain the water .
After the water starts boiling ,add the soaked rice .
Now cook for just 5 mins .
Drain the excess water through a colander /strainer .
ASSEMBLING THE BIRYANI
Layer the leftover pav bhaji in a thick bottom pan .
Add lemon juice + coriander leaves + mint leaves ,give a mix and level it .
If the bhaji is thick ,add 2 or 3 tbsp of beaten Curd and mix together .
***If you want ,you can add 1 tsp of biryani masala .
Layer the rice and level it .
Drizzle food colour + ghee + kewra essence .
Sprinkle fried onions .
Cover the pan with a foil nicely OR cover with a lid with dough sealing the edges .
Now place the pan on direct medium high heat for 5 mins.
After 5 mins place a tava below the pan and lower the flame to lowest .
Cook on dum for 35 to 40 mins .
Once done off the flame and let it rest for 30 mins .
Pav bhaji biryani is ready to serve with any side dishes like papad / salad / raita /egg etc
