Lehsuni kala chana
LEHSUNI KALA CHANA
INGREDIENTS
- Black chana – 1 cup
- Garlic- 1 pod
- Salt to taste
- Red chilli pwdr – as required
- Chaat masala – optional
- Olive oil or any oil – 2 or 3 tbsp
PREPARATION
- Clean ,wash ,rinse and soak the chana overnight .
- Pressure cook with little salt , till done .[don’t over cook – it should not be mushy -it should be whole ]
- Drain and keep aside .There should be no water .
- Take the garlics and crush it one by one withot peeling the skin .It should be whole.
METHOD
Heat oil in a pan .
Add the crushed whole garlic and stir fry for a minute.
Add the boiled chanas and mix well .
Stir fry on medium flame for 10 minutes till the skin of the chana becomes crisp.[don’t burn ]
Finally add salt + red chilli pwdr + chaat masala.
Serve hot .
NOTES
- This recipe requires more oil .In resataurants they are shallow fried .I used only 1 tbsp .
- Actually we make this with white kabuli chana [chole chana ]
- You require more garlic .
