MALAI MIXED VEG

INGREDIENTS

  • Mixed veges small pieces – 2 OR 3 cups [ potato / carrot / peas / beans / cauliflower ]
  • Onion – 1 finely chopped
  • Ginger garlic paste – 1 tsp
  • Tomato puree – 2
  • Oil + ghee – 1 1/2 tbsp
  • Chilli pwdr – 1 tsp or as per taste
  • Coriander pwdr – 2 1/2 tsp
  • Turmeric pwdr – 1/4 tsp
  • Garam masala or kitchen king masala – 3/4 tsp
  • Jeera – 1/2 tsp
  • Fresh cream – 5 or 6 tbsp
  • Tomato ketchup – 1 tbsp
  • Sugar – 1 or 1/2 tsp
  • Salt to taste
  • Kasoori methi pwdr – 1/2 tsp
  • Finely chopped coriander leaves to garnish

PREPARATION

  1. Chop the veges into small pieces to save cooking time also kids don’t make fuss while eating .
  2. Make puree form 2 medium sized tomatoes .

METHOD

Heat oil + ghee in a pan ,add jeera and let it splutter .

Add onions and fry till light golden .

Add ginger garlic paste and fry till raw smell leaves .

Add tomato puree + salt and cook till oil is released .

Add chilli pwdr + coriander pwdr +garam masala pwdr + turmeric + sugar and fry for few seconds.

Add the veges and stir fry for a minute .

Add 2 cup of water and mix well .

Cover and cook till the veges are done – stir in between .

Add tomato ketchup + fresh cream and mix well .

Simmer on low flame for a minute – the gravy has to of semi thickness consistency .

Add kasoori methi pwdr and mix .

Off the flame and garnish with coriander leaves .

Malai mix veg is ready to be served with any Indian bread or rice recipes .

NOTES

  1. For restaurant kind of colour add a pinch of tandoori food colour .
  2. For gravy you can also add 1/4 of fresh curd .[ not sour ]
  3. You can also add a tbsp of cashew paste for rich texture .
