PAYA SHORBA / NALLI NIHARI / PAYA SOUP
INGREDIENTS
- Lamb trotters / paya /lamb legs – 4
- Small onions / shallots – 8 nos [ peeled and chopped ]
- Green chilli slit – 1
- Grated ginger – 1 tsp
- Black pepper –1 or 2 tsp
- Jeera – 1 tsp
- Cardamom – 1
- Clove – 1
- Cinnamon – 1 small piece.
- Turmeric pwdr – ¼ tsp
- Finely chopped coriander leaves – ¼ cuo
- Salt to taste
- Water – 5 or 6 cups
- Chaat masala + lemon juice for garnish.
METHOD
Mix all the ingredients except chaat masala ,lemon juice and pressure cook it upto 10 – 12 whistles on medium flame till the bones become very soft /tender.
*** My way of pressure cooking – pressure cook on medium flame till the first whistle ,then lower the flame to lowest and cook for 10 to 12 mins .
Open the cooker once the pressure is released.
Adjust salt if required .
Strain it. [optional ]
While serving sprinkle chaat masala and lemon juice .
Serve hot with pav.
Don’t forget to suck the nallis well and chew off all the flesh on the bones .
TIPS TO CLEAN
- Buy fresh and good lamb trotters if possible the front legs
- Ask the butcher to clean it well by burning the hair.
- Scrape the trotters with a sharp knife on all sides to remove the remaining waste and burnt part.
- Wash it well in 2 – 3 water.
- I did not have much problem as I told my butcher to remove the whole skin with hair. after that I soaked it in water for sometime and removed the remaining waste. Then I roasted directly on the stove.
