Pineapple granita

GRANITA / ITALIAN ICEis like Indian gola – crushed / shaved ice drizzled with artificial flavours and sometimes topped with condensed milk .Granita is a form of semi frozen dessert .It is made from fruits crushed with lemon juice + water [ optional ] + sweetening agent like condensed milk /sugar / honey / honey syrup . The texture may be grainy or smooth .Instead of Sugar natural fruits , we can use  fruit juices or fruit puree .Granitas are frozen for 2 hrs, then they are removed from freezer ,mixed a bit with a fork and again frozen for 2 hrs .It should not freeze like hard ice , it should be like ice flakes or shavings .

INGREDIENTS FOR PINEAPPLE GRANITA

  • Pineapple juice – 2 cup
  • Lemon juice – 1 tsp  [ optional ]

INGREDIENTS FOR PINEAPPLE JUICE

  • Ripe Pineapple – 1 medium size
  • Sugar –  1/4 cup or more or less depending upon the sweetness of the fruit or as per your taste
  • A pinch of yellow food colour [ optional ]
  • Water – 4 or 5 cups [adjust according to the consistency ,you want ]
  • Few drops of pine apple essence [ optional ]

METHOD FOR MAKING JUICE

Peel the pineapple and chop it into small pieces.

Take the pineapple + water + sugar in pressure cooker.

Pressure cook upto 5 or 6 whistles .

Once done allow it to cool .

Blend it and strain it through a strainer.

Check the sweetness ,if required add more sugar and mix well .

*** hereif you want you can add pineapple essence and yellow food colour and mix well .

Pine apple juice is ready to use .

METHOD TO MAKE GRANITA

Bring the pineapple juice to room temperature .

Mix the pineapple juice and lemon juice well.

Pour it in a freezer box .

Freeze it for few hours .

Once done keep out for sometime to ease scraping .

Scrape the granita using a spoon or fork .

Serve chilled.

*** For Indian taste ,you can sprinkle little chilli pwdr or black salt / salt  or  chaat masala over it while serving .

Also while serving ,you can drizzle condensed milk over it .

VARIATION -You can directly grind 1/2 kg pineapple + 1/4 sugar + 2 tsp lemon juice + 1 cup water and freeze the mixture without straining for grainy texture .

NOTES

  1. Lemon juice is optional ,I did not add.
  2. Once my friend tried making without cooking the pineapple – by simply grinding pineapple and sugar , it did not taste good .So this time I cooked the pineapple.
  3. I follow the same recipe for making pineapple juice at home .But Iadd more water and sugar .
  4. You can add less or more water depending on how thick  you want the juice consistency to be.
  5. While serving you can also drizzle little condensed milk .
  6. Some times the fruit doesn’t have its natural fragrance , that’s when we add essence.
