POTATO BATTER FRIED

Battered potato fries is a popular food in the United Kingdom, Ireland, Australia, New Zealand, Canada ,germany ,Russia and South Africa .Mostly they use beer or soda to mix the batter , to make the batter light full of bubbles .The beer adds colour and taste. It also makes the batter light Here instead of beer / soda , I have used eno pwdr . This dish is bland in taste ,so has to be served with some tasty dips /sauces /chutney .Cheesy sauce is a great combo for it.

INGREDIENTS

  • Potato – 2 or 3 medium size
  • Maida / APF – 1 cup + 2 tbsp
  • Cornflour – ¼ cup + 2 tbsp
  • Pepper pwdr – 1 tsp
  • Mixed herbs / oregano – 1 tsp
  • Baking pwdr – 1 tsp
  • Water to mix the batter
  • Fruit salt /eno pwdr – 1 tsp
  • Salt to taste
  • Oil to deep fry

PREPARATION

  1. Peel the potatoes and cut them into evenly sized strips / fingers .Wash and rinse well .
  2. Cook in boiling water + salt for 4 – 5 mins.[  half cooked ]
  3. ****the potatoes should retain their shape – it should not break .
  4. Drain the water spread it and allow it to fan dry OR pat dry with kitchen towel and keep aside .
  5. Make a dry mixture of 2 tbsp corn flour and 2 tbsp maida and keep aside.
  6. NOTE – Keep all ingredients ready ,once u make the batter immediately u have to use it as we are adding eno pwdr .

*****  We can directly use Mc Cain French fries or potato wedges .

METHOD

Take maida + corn flour + salt + pepper pwdr + tsp mixed herbs + eno , mix water and make batter of medium consistency .[ thick enough to coat a spoon ]

Heat oil in a deep pan or kadai . [ not flat pan ]

Dust the half cooked fries with dry flour mixture. See that it is coated all over. Shake of the excess flour.

Dip the dusted potato fingers into the batter , let the excess batter drip off.

Slowly slide it into the hot oil.[ few  at a time ,don’t over crowd as it swells ]

Flip and fry  till golden brown all over .

Drain and remove on a absorbent paper.

Serve when hot with dips or sauce .

NOTE

It has to be deep fried .[ no shallow fry ]
