Pumkin with coconut
PUMPKIN WITH COCONUT
INGREDIENTS
- Pumpkin small cubes – 2 cup [ skinless and seedless ]
- Fresh coconut – ¼ cup
- Jeera – 1 tsp
- Shallots /small onions – 5
- Red chilli – 2
- Sambar pwdr – ½ tsp
- Oil – 1 tbsp
- Mustard seeds + urad dal – 2 tsp
- Turmeric pwdr – a generous pinch
- Salt to taste
- Finely chopped coriander leaves to garnish
- Curry leaves – few
PREPARATION
- Peel the skin ,discard the seeds and chop the pumpkin into small cubes .
- Grind the coconut + red chilli + jeera + onion into a coarse paste by adding little water .
METHOD
Heat oil in a pan ,add mustard seeds + urad dal and fry.[don’t burn ]
Add the pumpkin and stir fry for a minute.
Add turmeric pwdr + salt + coconut paste + ½ cup water and mix well.
Cover and cook till pumpkins become soft on medium low flame.
Keep stirring in between.
Once the water evaporates .increase the flame and cook till the colour of the coconut changes a bit .[ golden ]The coconut has to get roasted at this stage .
Ready to serve as side dish.
NOTES
- I chopped the pumpkin into very small cubes to reduce cooking time.
- Y not try this recipe with potato .
- If the pumpkin is not sweet ,add little jaggery .
