RAW BANANA IN ROASTED COCONUT

INGREDIENTS
- Raw banana – 2
- Onion – 1
- Curry leaves – few
- Tomato – 1 big
- Ginger garlic paste – 1 tsp
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Jeera – 1/2 tsp
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric – 1/4 tsp
- Coriander pwdr – 11/2 tsp
- Garam masala – 1/2 tsp
- Fennel seeds /saunf – 1 or 11/2 tsp
- Freshly grated coconut- 1/4 cup
- Salt to taste
- Finely chopped coriander leaves for garnish
PREPARATION
- Peel the banana and chop it into small cubes .Immediately put it in water to avoid discoloration.
- Heat a pan and add the grated coconut ,stir fry on medium flame till golden. add the fennel seeds also and fry for sometime .[ don’t burn the coconut ] Allow it to cool and grind it into fine . Add garam masala pwdr and grind into powder.
METHOD
Heat oil in a pan add mustard seeds and let it crackle .
Add onion + curry leaves and fry till brown .
Add ginger garlic paste and fry till raw smell leaves.
Add tomato + salt and fry till oil separates.
Add chilli pwdr + turmeric + pwdr + coriander pwdr and fry .
Add the chopped raw banana ,mix well and cook for a minute .
Now sprinkle 1/4 cup water and mix well .
Cover and cook till the raw bananas are done .
In between keep stirring.
Now add the coconut pwdr and mix well.
Simmer on low flame for a minute and off the flame .
Garnish with coriander leaves .
Serve hot with rice with any plain gravy OR with parathas.
NOTES
- This gravy I have made in mutton style which we make in south .
- Adjust spice as per taste.
- Instead of raw banana we use some other ingredients like soya /potato etc .
