INGREDIENTS
Pumpkin – ½ kg [ peeled and chopped ]
Green apple – 1 [ optional ]
Butter – / olive oil – 1 tbsp
Onion chopped – 1
Garlic 1 tbsp
Ginger – 1 tbsp
Clove – 2
Red chilli pwdr – ¼ tsp
Cinnamon – tiny piece
Water / stock – 4 cups
Salt to taste ,
NOTE –
I have added green apple for sourness to balance the sweet taste of pumpkin .If you don’t want to add , you can drizzle few drops of lemon juice while serving .
I made fresh veg stock at home .Recipe – Basic home made stock. You can use maggi magic cubes for making stock or else add plain water .
METHOD
Heat olive oil , add cinnamon + clove and give a stir .
Add ginger and garlic and stir fry for few seconds .
Add onion and stir fry till translucent .
Add pumpkin + apple + chill pwdr and mix well.
Stir fry for a min .
Cover and cook for 1 min.
Add the stock and mix well.
Cook till the pumpkin and apple becomes soft .
Allow to cool .
Transfer the cooked pumpkin and apple to mixie jar and blend into fine paste .
If you want you can strain , I did not .
Transfer the paste + stock to a pot and mix well .
