Horse gram is a storehouse of polyphenols, flavonoids, and potent antioxidants that keep your body strong, vibrant and young. Researchers from the Indian Institute of Chemical Technology have revealed that raw, unprocessed horse gram seeds have the ability to lowers blood sugar spikes post meal by slowing down gastric emptying time and reducing insulin resistance, thus making it a diabetic-friendly food. Sprouts are one of the most nutritious and also inexpensive food. It is a rich source of anti oxidants, vitamins, minerals, amino acids, enzymes and proteins. The anti oxidants present in sprouts helps in eliminating toxins from the body. Sprouts can be eaten raw or cooked. You can add sprouts to salads, soups, stir fry, etc. Sprouts have low glycemic index and are considered safe food for diabetics. It has disease fighting properties. .Sprouting increases vitamin content dramatically. This is especially true of vitamins A, B-complex, C, and E. The vitamin content of some seeds, grains, beans, or nuts increases by up to 20 times the original value within only a few days of sprouting. Research shows that during the sprouting process bean sprouts (moong beans-green gram) increase in vitamin B1 by up to 285 percent, vitamin B2 by up to 515 percent, and niacin by up to 256 percent.” Sprouts are alkalizing to our body. Many illnesses including cancer have been linked to excess acidity in the body. No doubt Sprouts are called the power house of nutrition. Sprouts combined with raw vegetables and fruits further increases their nutritional value.

INGREDIENTS

  • Horse gram sprouts – 1 cup
  • Finely chopped onion – ¼ cup
  • Finely chopped tomato – ¼ cup
  • Grated carrot / beetroot – 2 or 3 tbsp [ if adding beet squeeze the excess juice ]
  • Finely chopped cucumber – ¼ cup
  • Chaat masala –  1 tsp
  • Pepper pwdr /red chilli pwdr / finely chopped green chilli – ½ tsp as per taste
  • Salt
  • Lemon juice – 1 tbsp
  • Roasted skinless peanut – ¼ cup
  • Finely chopped coriander leaves – 1 or 2 tbsp

METHOD

Steam the  sprouts for 12 to 15  mins till bit soft  .

Take the sprouts in a mixing bowl .

Add rest of the ingredients one by one as shown in the video.

Mix it well with clean hands or spoon .

Healthy Sprouts salad are ready to serve .

NOTES

  1. Add ingredients as per ur taste . Also adjust quantity of each ingredients as per your likes.
  2. V can also add boiled potato.
  3. Y not add 1 tbsp of olive oil
  4. U can try different dressing for a salad – click here –
  5. Instead of steaming ,u can microwave for 5 mins OR boil till soft .
  6. Don’t over cook the sprouts – it should be just soft .
  7. Some don’t cook the sprouts , they use raw .
  8. I have added peanuts to get a crunchy texture in between .
  9. You can also add any finely chopped fruits [ pomegranate , grapes ,orange ]
  10. Adding sweet fruits to it , helps in reducing bitterness .
  11. If add beetroot ,squeeze the excess juice else the colour of salad will become too dark.
