RESTAURANT STYLE MASALA KHICHDI

INGREDIENTS

  • Rice – ½  cup [ any rice , I have used basmati ]
  • Tuvar / moong dal – ½ cup
  • Onion chopped – 1
  • Tomato chopped – 1
  • Oil + ghee – 1 tbsp
  • Few whole garam masala – 2 green cardamom / small piece of cinnamon /2 clove / 1 bayleaf
  • Jeera – 1 tsp
  • Asafoetida – a pinch
  • Green chilli chopped – 1
  • Ginger garlic paste – 1 tsp
  • Red chilli pwdr – ½ tsp
  • Turmeric – ¼ tsp
  • Garam masala pwdr – ½ tsp
  • Coriander pwdr – 1 tsp
  • Finely chopped coriander leaves – ¼ cup
  • Water – 3 ½ cup
  • Ghee for serving

PREPARATION

Clean ,wash and soak the dal and rice for 30 mins.

RESTAURANT STYLE MASALA KHICHDI

METHOD

Heat oil + ghee in a cooker .

Add jeera and whole garam masala , let it splutter .

Add onions and fry till translucent .

Add ginger garlic paste and fry till raw smell leaves .

Add tomato + salt and cook till soft .

Add masala pwdr one by one and fry for few seconds.

Add coriander leaves and mix .

Add soaked rice without any water .

Stir and cook for a min.

Add 3 ½ cup water and mix well.

Adjust salt if required .

Pressure cook upto 4 whistles on medium flame .

Allow the pressure to release.

Mash the khichdi with a ladle.

Add ½ cup of hot water ,if the khichdi is very thick .[ optional ]

Serve hot khichdi with any side dish like papad /pickle/dahi /masala papad /omlette.

While serving top it with more ghee .

While serving you can also top it with finely chopped onion + tomato + coriander leaves .

NOTES

  1. We can also add chopped vegetables like potato /cauliflower /green peas etc.
  2. If using toor dal ,then you can soak the dal for more time .
  3. Also we can use chana dal ,again soak chana dal for more time to get the mushy consistency .
  4. Water quantity depends on the kind of consistency you want .
