Sama rice kheer
SAMA RICE KHEER / VRAT KE KHEER [ Barnyard millets ]
INGREDIENTS
- Sama rice – ¼ cup
- Milk – 3 cup [ 600 ml ]
- Sugar – 3 OR 4 tbsp or as required
- Fried broken cashew for garnish
- Ghee – 1 tsp + 2 tsp sugar
- Cardamom pwdr – a generous pinch OR few drops of vanilla essence
PREPARATION
- Clean ,wash ,rinse and soak the sama rice for 30 mins .
- Fry the broken cashew .
METHOD
Boil milk in a heavy bottom pan .once it stats boiling ,lower the flame and add the soaked sama rice and mix well.
Cook on low flame till soft . Keep stirring in between .
Once it becomes soft , add cardamom pwdr + sugar and mix well till the sugar dissolves .
Once done off the flame .[the rice should be soft and not mushy . [you should feel the texture of it while eating ]
TO GIVE THE KHEER PINK COLOUR – [ optional ]
Take a small pan ,heat 1 tsp ghee in it on low flame .
Add 2 tsp sugar and cook it .
Once it starts bubbling and colour changes lightly ,off the flame. [ don’t burn ]
Cool it a bit and pour it in the kheer and mix it well .
Garnish with cashew and few strands of saffron.
Kheer is ready to serve .
Tastes better when chilled .
NOTES
- Soak the sama rice in hot water for 15 or 20 mins to save soaking and cooking time .
- The kheer thickens on cooling .
- You can use full cream or toned milk .
- To enhance the flavour reduce sugar and use condensed milk.
- It tastes very much like rice kheer .
