SWEET COCONUT RICE FLOUR POORI /JAGGERY COCONUT RICE FLOUR POORI

INGREDIENTS

  • Rice flour – 1 cup
  • Grated jaggery – ½ or ¾ cup
  • Freshly grated coconut – ½ cup
  • Cardamom pwdr – 1 tsp
  • Oil for deep fry
  • Water – same quantity as jaggery

PREPARATION

Take water + jaggery in a pan .

Heat it on medium flame .

Cook till the jaggery melts .

Add the freshly grated coconut + cardamom pwdr and mix well .

Now add the rice flour and mix well .

Lower the flame to lowest .

Cover and cook for 1 min.

Then switch off the gas and mix it well with a wooden spatula , cover it with a lid and keep aside for 10 mins.

Once it cools and you are able to handle it  ,start kneading it .

We have to knead it well to get a smooth dough .

*If you feel the mixture is too dry ,you can dip your hands in warm water while kneading .

Cover and keep aside for 10  mins.

METHOD

Now divide the dough into equal portions and roll into smooth balls.

Traditionally we tap it with hands to make small pooris .

You can roll it into small pooris  using rolling pin.

Heat oil in a deep pan .

Once the oil is hot ,slide in the poori and fry on both sides till it puffs up and turns light golden colour.

While frying press gently on all sides to help the pooris to puff up .

Once done remover on absorbent paper ,

Serve hot for breakfast or snack time .
