Whole wheat coconut cookies
WHOLE WHEAT COCONUT COOKIES ……..YUMMY AND CRUNCHY…
INGREDIENTS :
1 cup whole wheat flour
1/2 cup butter (softened)
1/2 cup sugar
1 tsp vanilla or coconut essence
1/4 cup Desiccated coconut
Milk as required
METHOD:
Firstly grind the sugar into a powder.
Sift the flour and keep aside.
Then beat the butter + sugar , add sugar gradually until it becomes a creamy, light and fluffy.
Now add essence and blend .
Add the desiccated coconut and mix well .
Add in the flour little by little and knead to form a dough.
Add milk if required.
Refrigerate for 10-15 mins.
Make cookies with your hand or by rolling out the dough.
Sprinkle some desiccated coconut on the top.
Bake in a preheated oven at 180 degrees for 18-20 mins.
- NOTES:
I used white unsalted butter , you can also use salted butter . - The baking time depends on the oven you use and size of the cookies . I have microwave convection and the cookies were done in 20 mins.
- Also the cookies are a bit soft from the top when they are done. They will become crunchy as they cool.
- You can use half tsp vanilla essence + half tsp coconut essence too.
