quesadilla is a Mexican dish and type of sandwich, consisting of a tortilla that is filled primarily with cheese, and sometimes meats and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States.

The quesadilla has its origins in colonial Mexico. The quesadilla as a food has changed and evolved over many years as people experimented with different variations of it.[4] Quesadillas are frequently sold at Mexican restaurants all over the world.

Quesadillas have been adapted to many different styles. In the United States, many restaurants serve them as appetizers, after adding their own twist.[14] Some variations use goat cheese, black beans, spinach, zucchini, or tofu. A variation that combines the ingredients and cooking technique of a quesadilla with pizza toppings has been described as a “pizzadilla”.

Even dessert quesadillas are made, using ingredients such as chocolate, butterscotch, caramel and different fruits.

Breakfast quesadillas are also made, using ingredients such as eggs, cheese, cottage cheese , chicken  and bacon.

INGREDIENTS
 Chapatti or tortillas – 2 or 3
 Finely chopped onion – ½ cup
 Finely chopped tomato – ½ cup [ remove the pulpy part]
 Finely chopped capsicum – ½ cup
 Boiled corn – ½ cup
 Schezwan 2 tsp + 1 tbsp mayo + 1 tsp ketchup
 Cheese as required [ mozzarella preferred]
 Salt to taste
 Cheesy dips or any dips or sauces or mayo or salsa to serve

METHOD
Take a bowl , add mayo = schezwan chutney + ketchup = salt and mix well ..
Add all the veges one by one and mix well .
Cover and keep this aside for 1o or 15 mins .
Heat a tava / pan , place the chapatti or tortilla over it .
Fry for few seconds on both the sides on low flame.
Spread the vege stuffing on half part of the tortilla as shown in then image .
Spread grated cheese over the veges .
Fold the chapatti half way like a moon shape
Gently press it and roast till it becomes crispy.
Carefully try to flip on the other side .
Fry till it becomes crispy and golden spots appear ,but it should not burn .Keep the flame low.

Once done ,remove and serve hot with dips.

NOTES
1. You can add any ingredients of your choice for syuffing like baby corn, boiled egg,chicken ,mushroom ,paneer etc.
