Tender coconut granita

GRANITA / ITALIAN ICEis like Indian gola – crushed / shaved ice drizzled with artificial flavours and sometimes topped with condensed milk .Granita is a form of semi frozen dessert .It is made from fruits crushed with lemon juice + water [ optional ] + sweetening agent like condensed milk /sugar / honey / honey syrup . The texture may be grainy or smooth .Instead of Sugar natural fruits , we can use  fruit juices or fruit puree .Granitas are frozen for 2 hrs, then they are removed from freezer ,mixed a bit with a fork and again frozen for 2 hrs .It should not freeze like hard ice , it should be like ice flakes or shavings .

TENDER COCONUT GRANITA

INGREDIENTS

  • Tender coconut flesh – 2 cup
  • Tender coconut water – 1 or 1 1/2 cup
  • Milk maid – 1/4 cup or more / less depending on the sweetness of coconut flesh and coconut water
  • Lemon juice – 2 tsp [optional ]

PREPARATION

  1. Scrape of the coconut flesh gently without scraping the brown part .
  2. Chop it roughly .

METHOD

Take the coconut flesh + condensed milk + coconut water + lemon juice in the mixie jar and blend it well .

Blend it to a smooth texture or coarse texture depending on your taste .

Check the sweetness , if less add more condensed milk and blend .

Transfer it to a freezer box .

Freeze it in the freezer for few hours only .

We don’t need hard frozen one but a bit loose like ice shaving .

Once done keep outside for few minutes .

Scrape it with a fork and serve chilled like snow flakes  .

Tastes nothing less than a Naturals tender coconut ice cream.

VARIATION FOR RICH TEXTURE – Freeze for 2  hrs , remove and blend again .Freeze it again for 1 hr and then again blend it – Repeat this process 3 to 4 times in a gap of 1 hr to get a perfect rich texture .

FOR TENDER COCONUT KHEER – After blending the coconut flesh + coconut water + condensed milk ,add 1 cup of full fat milk [ boiled and cooled ]  mix well and serve chilled . You can add small bits of coconut flesh .Also you can add cashew fried in ghee .

NOTES

  1. Instead of condensed milk we can use sugar .
  2. Also while serving ,you can drizzle condensed milk over it .
  3. You can also add tender coconut flesh bits to get the crunch in between while eating .
  4. Condensed milk enriches the taste .
  5. Adjust sweetness as per taste .
  6. Lemon juice is optional .
  7. While serving it should be in bit melted form .
