Nankhatai with oil
NANKHATAI WITH OIL

INGREDIENTS
- Maida – 1 cup
- Wheat flour – 1/2 cup
- Sugar pwdr – 6 or 7 tbsp
- Oil without any flavour /smell /colour – 1/2 cup
- Cardamom pwdr – 1 tsp
- Baking soda – a pinch [optional ]
METHOD
Take oil + sugar pwdr in a mixing bowl and blend well till creamy .
Add the wheat flour + maida + cardamom pwdr + baking soda and mix well .
Now knead it into a smooth dough .
The dough should hold shape .
If the mixture is very dry , you can add few tsp of oil to get the right texture .
Preheat the oven at 180 * C convection mode
Take small portions of dough and make smooth balls .[ 20 or 22 ]
Arrange the balls on a greased baking tray .
Top it with a small piece of cashew and press it gently.
I have not flattened the balls. If you want you can flatten it a bit .
Bake the nankhatais at 180 * C for 20 to 22 minutes till the nankhatais are done.
Allow it to cool.On cooling the nankhatais become crispy/crunchy .
Store it in an air tight container.
VARIATIONS
- *** If time provides you can cover the dough in an air tight container for few hrs or even overnight .Here dont use baking soda .
- You can dust the balls with sugar pwdr before baking ,gives a nice texture and flavour is enhanced .
- You can add 1 tbsp of fine rava ,gives a nice grainy texture inside the nankhatai.
- You can take whole of maida or half of each flours or you can even take a combo of maida + wheat flour + besan.
