Eggless whole wheat bran cake
- Whole wheat flour- 1/2 cup + 2 tbsp
- wheat flour bran – 1/2 cup
- brown sugar – 6 tbsp
- baking pwdr – 1/2 tsp
- baking soda – 1/4 tsp
- oil – 2 1/2 tbsp or 40 ml
- curd at room temperature – 6 tbsp
- water – 6 tbsp
- vanilla essence – 1 1/2 tsp
- walnurt chopped – 1/4 cup
- black raisins chopped – 1/4 cup
PREPARATION
- Grease a small cake tin as the quantity of flour is less.
- Powder the brown sugar.
METHOD
take both the flours in a plate .
add baking pwdr + baking soda +sugar pwdr + raisins and walnuts and mix well .
the dry mixture is ready .Transfer to a mixing bowl .
now for wet mixture ,take curd + water + oil + essence in a mixie jar and blend it well.
*** Preheat the oven at 180 * [ convectional mode ]
now pour the wet mixture into the dry mixture and mix well with a spatula – see that there are no lumps.
never over beat any cake batter.
pour the batter in the greased tin and tap it gently.
bake it for 30 to 35 mins or until a toothpick inserted in centre comes out clean..
check after 25 mins .
baking time varies .mine was done in 28 mins .
allow the cake to cool.
run a knife around the edges of the tin to loosen the cake.
once the cake cools down completely ,slice it it and enjoi .
store in air tight container upto 2 days.
NOTES
- the cake has moist texture .
- same batter can be used for cup cakes .
- instead of wheat bran ,you can use only wheat flour .
- for chocolate cake ,replace the 2 tbsp flour with unsweetened cocoa pwdr .
- the sweetness for my family was perfect , you can add 1 tbsp more sugar .
