Gur papdi / sukhadi
GUR PAPDI / SUKHADI
INGREDIENTS
- Wheat flour sieved – 3/4 cup
- Coarse wheat flour [ not sieved ] – 1/4 cup
- Ghee [ good quality ] – ½ cup
- Grated jaggery – ½ cup
- Mixed dry fruits powder or finely chopped – ½ cup
- Greased small tin
METHOD
Heat ghee in a heavy bottom pan , add the wheat flour and mix well.
Stir and cook on medium low flame for 10 to 12 mins till golden brown colour .
Don’t burn it .
The flour will change colour and become aromatic .
Off the flame and add half of the chopped mixed dry fruits and mix.
Now add the jaggery and mix well .
Mix till the jaggery melts well .
Be quick after mixing the jaggery ,as it will thicken .
The mixture will thicken and start leaving the edges of the pan .
Transfer this immediately to the greased pan and level it.
Again top it with finely chopped dry fruits and press it gently with a spatula .
After 10 mins , slice it in desired shape when it is warm with greased knife .
Keep it to set for 1 or 2 hrs before serving .
Ready to serve .
NOTES
- Authentic recipe doesn’t add any flavoured ingredients ,but if u want you can add cardamom or nutmeg pwdr .
- We can add fried dink /edible gum also .
